Monday, October 27, 2008 Mum's birthday dinner Labels: apple crumble, baking, Family dinners, Japanese cooking Monday, October 20, 2008 One-dish meals: Roasted chicken and vegetables What imagery comest to mind if you are thinking on creating a one-dish meal? Curries Stews How about roast chicken with vegetables? A homecooked meal was just what I needed to wind up my week after a bout of virus infection. I did not want to be spent half my weekend in the kitchen sweating over food. Not this week at least. So I decided to go with a roasted whole chicken served with potatoes, carrots, onions and mushrooms. It fitted into my criteria of a healthy and simple one-dish-meal. After a walk through the supermarket, J and I started on the marinating the chicken early. After cleaning the chicken, we simply rubbed olive oil and sherry on the trussed chicken and seasoned it with maldon smoked sea salt, freshly grounded black pepper, loading up on rosemary leaves and stuffing the chicken with a halved lemon. All we had to do in the evening was to place the chicken on a rotisserie over our rack of vegetables so that the fragrant juices from the chicken will drip onto the vegetables. We placed the chicken in the oven for about 1.5 hrs at 180 degrees celcius. The result was pretty lovely. The chicken meat was still tender and juicy, definitely not a victim of overcooking. The vegetables were flavourful as expected and the meal was complete with a young fruity Riesling. For some reason, I am pretty excited about cooking next week. Planning a Japanese inspired meal for my mother’s birthday since she still prefers Asian cuisine. Roast chicken with roast vegetables and a simple salad Labels: easy meals Saturday, October 11, 2008 Saturday lunch in: Easy classic sandwich Grilled sandwich- honey ham, cheddar, tomato slices, argula, sweated onions on multigrain bread On the days when you feel like you had too much greasy outside food, all you crave for is something healthy, something hearty, something homemade by you. On such days, I turn to my comfort food- a simple yet classic sandwich. I have everything I need and want in a sandwich- comforting carbs, healthy greens, favourful meal. This time, J and I put together a grilled sandwich of argula, tomatoes, honey baked ham, cheddar cheese, capers and sweet sweated onions on wholegrain bread. Lunch was ready in 1/2 hour. How perfect!
